I'm wondering what modifications I would have to make to run 31" tires on my CJ7? Also, if a lift is needed, I would appreciate specifications such as body vs. suspension and preffered manufacturer. Many thanks... :D

A 2-1/2" suspension lift should be enough to clear 31's. I wouldn't ever recommend more than a 1" body lift and I don't think that would give you enough clearance. A 4" suspension lift is a bit more complicated to do but it would give you the option of going to 33's at a later date if you wanted to. As far as a manufacturer, it seems to me that the better kits cost more. If you decide to go with a 2-1/2" lift, don't let 'em sell you crap like a transfer case lowering kit or drop pitman arm.
You should be able to run 31" tires, say 31x10.50s, on a stock CJ with no modifications. You might get slight rubbing at full articulation, or when turned fully against the lock, but nothing to get excited about. Ran my '71 this way for the first 4 years I owned it.
I know a guy who runs 32s on stock suspension without "much" rubbing... Not my choice, but...
You can run 33s with only a 2.5" lift, 1" body lift. (Add 1" extended bumpstops to save from any serious rubbing at full stuff)
I've run that combo on my '71 for years.
